So when it comes to fall, pumpkin rules my world. Anything and everything pumpkin is heaven in my book. Do you know what pairs well with pumpkin? CINNAMON. And you know what the perfect ingredient for these mini pumpkin loaves was? My absolute favorite snickerdoodle protein power by PES. If I could, I would eat this protein powder right out of the tub. It's like a warm cinnamon snickerdoodle cookie that your grandma used to make you while you watched TV.
The recipe is fairly simple, that you just might flip backwards and dance. I did the dancing part, but not the back-flip because I would break every bone in my body.
What you need:
1 scoop of PES snickerdoodle protein powder (31g)
1/2 cup of pure pumpkin
1/4 cup of liquid egg whites
dash of cinnamon or sweetener (optional)
Directions:
1. In a bowl, mix together all the ingredients until it is a pretty thick consistency. Make sure you mix it well
2. Distribute evenly into a mini loaf pan (mine made 6) and bake at 350 for about 10 minutes or until they come out clean with a toothpick
3. Let cool for about 15 minutes and store extra in a container in the fridge (I ate all mine in one sitting so there were none left over)
