Meal prep for me is key! One of my favorite on the go meals is meat loaf. Sounds odd, but these are even good cold. They're also simple to make and have minimal ingredients that you probably already have in your house. Who knew meal prep could be so easy?
What you need:
20 oz ground beef
1 egg
1/4 C Almond flour
3 T Mrs. Dash taco seasoning
2 T Sugar free ketchup (I used Alterna Sweets)
2 T Worcestershire Saice
Directions:
1. Combine all ingredients together in a bowl
2. Portion into 8 equal loaves in a sprayed mini loaf pan
3. Bake at 350 for about 40 minutes
4. Pay off the extra grease and top with whatever you'd like
5. Let cool before storing in the fridge
6. Enjoy! :)
