Don't you just love when you go to make one recipe but it turns into something different? Yeah that's what happened here-- went to make cookies n cream "Reese's cups" but left them sitting out and they got melty. But it was heaven! Like mini ice cream bites. And who doesn't love ice cream?
What you need:
1 scoop PES cookies n cream protein powder (Use th code LowCarbCook for 30% off your purchase)
2 T coconut oil
Enough unsweetened milk to help mix
Candy of choice (I used Atkin's candies which are heaven)
Directions:
1. Met your coconut oil in a bowl until it is in liquid form
2. Add in your protein powder and mix. It will be a bit difficult to mix, but this is where you add in your milk a little at a time to help get a thick pouring liquid
3. Divide evenly between two silicone cupcake liners, adding in your candy throughout
4. Set in the freezer for 30-45 minutes until frozen
5. Take them out of the molds and let set for about 10 minutes until it starts to melt. The longer you wait the more "melty/ice creamy" it will be but 10 minutes was good enough for me considering they weren't even supposed to melt
You can see between the two pictures the difference between when I first took them out to after they melted a bit. Be a champ and eat them with your fingers, because eating without silverware makes you look silly ;)
