It's so close to Christmas and I am SO excited! I love everything about Christmas; from the decorating, to the Christmas music, to the baking, I LOVE IT ALL! I decided to get a head start at 2 of the 3 listed above. (If I could decorate for Christmas right now, I totally would!)
Anyways, I decided to bake some chocolate pumpkin protein cookies. They were a bit on the dry side, but dip them in vanilla almond milk and it's delicious.
What you need:
46g (3 T) of Egg Beaters
1 scoop of PES Milk Chocolate protein
1/4 C pumpkin
1/2 C reduced or no salt added Chick Peas
1 t of Natural Unsweetened Cocoa (if you like the extra dark chocolate)
1/2 t baking powder

Directions:
1. Drain and rinse your chick peas under cold water
2. In a bowl, mix together your dry ingredients
3. In a separate bowl, mix together your wet (including your chick peas) and slowly add in your dry ingredients
4. Mix together by hand (if you want the chick peas to give it texture) or mix together in a blender until smooth
5. Scoop out into little balls and bake at 350 for about 8-10 minutes
6. Eat the whole batch and listen to Christmas music (A MUST)
