Pretty sure I just died and went to cookie heaven. Is that a thing? Cause I'd love to see all the cookies. Anyways, lately I've been sitting in class thinking of another way to recreate a Girl Scout cookie that was tasty yet simple. I made two versions of Thin Mints so this time I decided to go with Tagalongs! (I'm such a dare devil I know..haha) These cookies were bigger than those teeny Girl Scout ones so one for me was enough. Buuuuuttt...I had two because PEANUT BUTTER. I got the cookie base taste, the peanut butter filling, and the chocolate coating all in one bite and that's basically what heaven tastes like, right? Enough of my rambling because I'm not even sure how many people read this part :( I guess I just like to ramble.
What you need:
1 Vanilla Quest bar
2 T peanut butter
15g Quest peanut butter protein powder
1 oz sugar free chocolate
Directions:
1. Microwave your quest bar in the microwave on parchment paper for 10-15 seconds, until soft
2. Cut into 3 equal slices, roll into balls, and then flatten them to make your cookie base
3. In a bowl, mix together your peanut butter and protein powder (the peanut butter protein makes the peanut butter flavor stand out) It will be a bit thicker so give it time to mix-- you can add a pinch of unsweetened almond milk if needed
4. Equally spread your peanut butter mixture on your cookies and place in the fridge for about 5 minutes
5. Microwave your chocolate in a bowl in 30 second intervals until liquid consistency
7. Take your cookies out of the fridge and pour the chocolate coating on each one, spreading over the tops of the cookies
8. Place in the fridge for 10 minutes or until the chocolate hardens
9. Bite into the cookie and sing to the cookie lords!
**Notes: You could also do a mix of peanut flour and quest peanut butter powder to make these lower in calories, but I love my Skippy ;)
