So I've made different variations of peanut butter cookies, but these ones are definitely a hit! Simple and delicious. You can never eat enough peanut butter! I doubled my recipe and got around 45 cookies - I probably ate 3 cookies worth of dough ;)
What you need:
1 cup peanut butter
1 cup Splenda sugar substitute
1 egg
1 teaspoon vanilla extract
Directions:
1. Preheat your oven to 350 and spray a cookie sheet with nonstick cooking spray
2. Mix the peanut butter, Splenda, egg and vanilla extract all together in a bowl
3.Roll the dough into "walnut-sized" balls and place 2 inches apart on the cookie sheet
4. Using a fork, flatten the cookies crossways, like you do the usual peanut butter cookie
5. Bake for about 9-10 minutes or until they are just starting to turn golden brown
