Sometimes while baking, I just need a quick single serving of something sweet. When I first came across mug cakes, I was kind of skeptical to try them. I will admit, my first few attempts were a fail. They came out spongy and rubbery, and they did not taste good at all. So after experimenting around with a few ingredients, I came up with ones that are actually pretty good!
What you need:
1 scoop protein powder of choice (I really enjoy PES and Quest Nutrition)
1 T Coconut flour
1 T Liquid Egg Whites
1/4 t baking Powder
1/4 C Unsweetened Almond Milk
1 T vanilla (optional)

Directions:
1. Spray a mug with coconut spray so your cake doesn't stick
2. Add in your ingredients and mix well
3. Microwave for 1 minute. Now, microwaves are different so you need to make your own judgement. Sometimes I throw mine in for an extra 20 seconds. However you want to be sure you DON'T over cook because it will come out rubbery
4. Turn the mug upside down on a plate and enjoy
