There's nothing quite like a nice fruity slice of bread. Blueberries are one of my favorite fruits that are lower in carbs, but packed with flavor! I was so excited when this loaf came out perfect. It was hard to just eat one slice I must admit, and adding butter to it really brings out the flavor of the blueberries!
What you need:
112g Almond Flour
3 eggs
3 T Olive Oil
1/3 C Blueberries
2 t Baking Powder
1 t Vanilla Extract
Directions:
1. Preheat oven to 350 degrees
2. In a bowl, mix together your almond flour, eggs, olive oil, and baking powder
3. Carefully fold in the blueberries
4. Pour into a greased loaf pan -- I used a small one because the mixture dies not rise much
5. Bake for 35 minutes and let cool
6. Enjoy with a nice cold slab of butter :)
