So as a kid, chicken nuggets were my life. I mean I literally ate them three times a week. My favorite were the nuggets shaped like dinosaurs. I convinced myself they tasted different, but I'm pretty sure I just loved them because they were fun shaped. Who doesn't love eating fun shaped food? Okay, back to real time, these were so simple and they brought back my childhood memories. So how do you make homemade chicken nuggets? Simple.
What you need:
1/4 C almond flour
3 T egg beaters
4 oz of cut up skinless, boneless chicken breast
Directions:
1. In three separate bowls, put your almond flour, egg wash, and chicken bites
2. Take half of your chicken bites and drench them in your egg wash, and then transfer them to your almond flour coating. Your chicken just needs to be coated lightly! Make sure you don't over "bread" them
3. In a skillet sprayed with nonstick spray, place your coated nuggets and let them get crunchy and moist on all sides
4. Finish coating your other nuggets while the first half is in the pan and place them in the pan when the first half is done. Each batch took me about 8-10 minutes. Make sure your chicken is cooked thoroughly cause you don't want to be eating raw chicken
