White Chocolate Peanut Butter Popcorn Candy! Try saying that five times fast. It's fun to say and fun to eat. AND GUESS WHAT? It's low carb. Did you just read that right? Low carb? YES! When I first got my no sugar added white chocolate, I knew I had to make a sweet and salty treat. With Christmas Eve being tomorrow, I knew I had to experiment and think fast!
What you need:
15g popcorn
1 oz no sugar added white chocolate, melted - I used Amberlyn Chocolate- you can get 20% off with the code "lowcarbcooking" at checkout
2 T Peanut Butter (you can use powdered peanut butter or regular but I find using powdered peanut butter such as EatMeGuiltFree works well- and its lower in calories
Directions:
1. Lay out your popcorn on a sheet of wax paper
2. In a bowl, mix your powdered peanut butter with water until a thin consistency and set it aside
3. In another bowl, put you white chocolate and microwave for 30 seconds intervals until it it completely melted, watching it carefully
4. Drizzle your white chocolate and peanut butter all over the popcorn
5. Place it in the freezer for about a half hour until it sets
6. Break off into small pieces and enjoy :)
