When I was younger, almond brittle and peanut brittle were a staple in my house. My mom and I would share some every night, but I'm pretty sure I overate on it just about every night. I truly can't remember the last time I actually enjoyed some because it is just loaded with sugar..no thanks! But this two ingredient Peanut Brittle brought back all those memories from when I was younger, AND it's basically guilt free.
I'm like actually obsessed with eating this now. It's so crunchy and peanut-y (is that a word?) and helps with my sweet tooth! Simply mix together peanuts and 2 T of Sweet It in a bowl and bake at 350 for about 10 minutes on foil. It is magic! It comes out so crunchy and amazing that you'll literally want another.
