I absolutely love cookies! It's my guilty pleasure. And when I can make cookies that are healthier, it's always a plus. Peanut butter cookies are one of my favorite cookies, but they're always higher in sugar and sugar is NOT my friend. When I came across Peanut Butter and Co's White Chocolate Peanut Butter, I knew this peanut butter would be perfect for a sweet peanut butter cookie! It is a bit higher in carbs (10g for 2 T) but it gives these cookies a great taste.
What you need:
1 C Peanut Butter and Co White Chocolate Peanut Butter
2 T of natural regular peanut butter (optional)
1 C sweetener
1 Egg
1 t vanilla extract
Directions:
1. Preheat oven to 350° F.
2. Line a large cookie sheet with parchment paper
3. In a large mixing bowl, combine peanut butter, sweetener, egg, and vanilla - stir well with a spoon
4. Roll the dough into 1″ balls and place the balls on the prepared baking sheet
5. With a fork, make "criss-crosses" on each cookie
6. Bake for 12 minutes, turning the cookie sheet halfway through baking
7. Remove cookies from the oven, and sprinkle the cookies with some of the remaining sweetener
**Makes 16 cookies.
