I stick to not eating meat Friday's during lent, so sometimes I eat new things I wouldn't eat on a regular basis. I'm not a huge egg fan, but they're not TERRIBLE! I have a love/hate relationship with eggs, but I sometimes find eggs to just be "ehh" except when needed in baking and cooking. One thing I really enjoy is Tuna- I can't eat a lot of it, but once a week is do-able for me.
These are quick and easy and twice as good cause they're fried in buuuuttttaaaahh. Who doesn't love butter?
1 can of Tuna
1/3 cup shredded cheese (I use sharp)
1 egg
Seasoning of choice (garlic powder, onion powder, etc)
1 T butter
Directions:
1. In a bowl, mix together the above ingredients minus the butter. Be sure to mix well!
2. On medium heat, melt your butter
3. Take little rounded scoops and form balls and press gently into the pan
4. Let cook for about 5 minutes then flip to cook the other side
5. Continue cooking until they're fried and golden on both sides
