Who doesn't love Cake Pops? Cake pops are just one of those desserts that just most people have had and love. These cake pops were inspired by Thin Mint cookies. They're the perfect balance between chocolate and mint, but much healthier!
What you need:
Cake:
1 Scoop of Chocolate protein powder (I used Quest)
10g coconut flour
1/2 T cocoa powder
2-3 T vanilla almond milk
1 t mint extract
Coating:
1 oz no sugar added white chocolate (I used Amberlyn's Chocolates)
2 squirts green food coloring
Directions:
Cake:
1. Mix together your dry ingredients and then add in your almond milk (It will come together, trust me- it just takes awhile to mix)
2. Roll into 4 balls and place on wax paper
3. Let set in fridge for 10-15 minutes
Coating:
1. Microwave your white chocolate in a microwave safe bowl for about 1 minute- watch it carefully so it doesn't burn
2. Stir it with a spoon until it's completely liquid
3. Add in your food coloring and mix well
4. Drop your cake balls into the white chocolate coating the entire thing
5. Spoon out and place back on parchment paper and set in fridge until chocolate coating hardens
6. Enjoy!
