Ahhhh. Good o'l snickerdoodles. They remind me of going to my grandma's house and helping her bake cookies. As a child, I always loved licking the rest of that batter out of the bowl. Come eating time, I could have eaten all of them by myself. I had NO self control with those babies! When I came across PEScience snickerdoodle protein powder, I was like what?!? Is this real life? I need to make cookies ASAP. Even though I'm older now, I still feel as though I would eat all the cookies if I made a batch. So I thought to myself, "I just need to make ONE cookie to satisfy my sweet tooth, but how?" Then the light bulb went off and I thought BINGO! SWEET IT! I love using sweet it because it's the secret ingredient used in quest bars, and it's full of fiber, keeping it low carbs. I decided to experiment with the two ingredients, sweet it and PEScience protein, and BAM! Magic happened.
Isn't she a beauty? And she doesn't take long to make. Because everyone knows that the worst part about baking cookies is waiting for them to come out of the oven. Am I right?
What you need:
15g of PEScience snickerdoodle
15g of liquid sweet-it
Directions:
1. Mix the two ingredients in the bowl until it gets a "doughy" consistency (you may need to add more of the vita fiber because it is difficult to mix, but 15g was good for me)
2. Place on parchment paper and mold into a cookie shape in your palm
3. Bake a 350 for about 10 minutes so the cookie gets nice and crunchy
4. Let sit of a minute and just take a big whiff of your new low cal low carb glorious cookie
