I absolutely LOVE Peanut Butter Cups. Who doesn't? It's just one of those treats that taste as good as it did the last time you had one. After making these, I found out that making homemade peanut butter cups is the way to go!
What you need:
1 C peanut butter (creamy or crunchy)
1 T butter
Sugar free chocolate (I used 4 chocorite dark chocolate bars)
Baking cups
Directions:
1. In a microwave safe bowl melt the chocolate with the butter at 20-30 second intervals until completely smooth - be careful not to overheat
2. Place your baking cups on a cookie sheet or in a large baking dish
3. Put a small amount of the melted chocolate mix into the bottom of each cup and completely coat the inside using the back of a small spoon.
4. Place them in the freezer for a couple minutes until the chocolate has hardened.
5. Place some peanut butter firmly into the bottom of each cup, making sure to leave room for more chocolate on the top.
6. Cover the peanut butter with about a teaspoon of the melted chocolate (be sure to spread it out so it touches all sides of the paper baking cups)
7. Return them to the freezer again to completely harden the chocolate.
8. Peel the paper off and enjoy!
**I melted the peanut butter for 15 seconds just so it made it more creamier (optional, but highly recommended)
