Nothing beats homemade bread. My grandma is the pro at making homemade bread. She makes "Easter Bread" every year and it is one food I will allow myself to have because it's literally the best! If you've never had it or heard of it before, Google it! It's heaven.
Tis the season for baking and Christmas movies, so I decided to attempt my own bread. Shockingly, it was a success! I don't want to toot my horn, but I am on this one. It may be one of my favorite recipes this far. If you love pumpkin and bread, this is definitely for you!
1 1/4 C Almond Flour
4 T Coconut Flour
6 eggs
2 T butter, melted
1/2 C pumpkin
1 1/2 T baking powder
3 t pumpkin pie spice
1/2 C sugar free maple syrup
1/2 cup sugar equivalent
1 T Vanilla
Directions:
1. Preheat oven to 400 degrees
2. Combine almond flour, coconut flour, baking powder, and pumpkin pie spice together in a bowl and mix
3. Add your wet ingredients to your dry and blend well with an electric mixer
4. Line a loaf pan with parchment paper leaving some of the pape sticking out so you can pullout easy, and bake for 50 minutes
5. Let your loaf cool before you cut into slices and store in the freezer
