Happy 5th of July! I hope everyone enjoyed their holdiday weekend; I know I sure did! It's always fun spending time with family and enjoying great food. One of my favorite things to do is make something low in carbs and take it with me. I must say, out of everything I've taken to parties, this was the biggest hit. They were quick to make but quicker to disappear at the party! ;)
What you need:
3 C Carbquik (this is a low carb baking mix that is just like Bisquick but is low in carbs)
1 lb pepperoni cut up into bite size pieces
1 lb shredded sharp cheddar cheese (or whatever cheese you'd like)
3/4 C water
Directions:
1. Put your Carbquik and water into a bowl until dough consistency
2. Add your pepperoni and cheese to the dough and mix until it's all mixed together
3. Roll into 1 inch balls and place on a cookie sheet
4. Bake at 400 for 12-14 minutes
5. Dip in your favorite dipping sauce and enjoy :)
