I absolutely LOVED lasagna growing up; I'm Italian! It was one of my favorite dishes my grandma would make when I was younger. I knew I had to come up with a dish that would be similar, but minus all the carbs. When I sat and thought about it, I thought I could use zucchini slices like very one in their brother who is on a low carb diet does. But I wanted it to be different. After thinking back on how lasagna tastes, could I really taste the pasta? No! it was the flavors from the ricotta and cheese that I really enjoyed! So I came up with this simple dish that has all the flavors of lasagna minus the carbs. This dish could even be used as a dip!
What you need:
1/2 C ricotta cheese
1/4 C low carb sauce
28g feta cheese (or thin swiss slices)
Directions:
1. In a bowl, microwave the ricotta cheese for 20-30 seconds just to get it a better consistency
2. Layer half of the ricotta on the bottom of a ramikan, making it the base
3. Spread a little bit of sauce on top and spread it out evenly with a spoon
4. Repeat steps 2 and 3 until you have all your layers just like you would real lasagna
5. Sprinkle the feta on top (you can add a layer of feta between the lasagna if you wish)
6. Microwave for 1:30 making sure to keep an eye on it
7. Continue with :30 intervals until the cheese gets melty and the sauce gets kind of "bakey looking" and create bubbles - this makes it so good!
8. Enjoy with a fork or spoon, whichever you desire :)
