Cookies are my life. And when I can make just ONE cookie at a time, it's better so I don't eat the whole batch. Eating just one cookie? Who does that. The struggle is real ;) And it takes less than the time of your favorite TV show. So when I can have a protein packed low carb cookie in less than 15 minutes, it's a win-win situation. This is just like my 2 ingredient "Snickerdoodle single cookie" but with added chocolate.
Do you see all that melty gooey chocolate? That's the sight I like to see!
What you need:
20g of Sweet-It Vitafiber
20g of Milk Chocolate protein (my favorite is PES)
1 piece of Amberlyn's sugar free chocolate, broken into pieces (you can get 20% off your order by using the code "lowcarbcooking")
Directions:
1. In a microwave safe bowl, microwave your sweet-it for about 30 seconds, until it bubbles
2. Immediately add in your protein and stir, dropping in the chocolate pieces one at a time (This step takes a few minutes until you can get it all mixed together. You can also add a touch of water if you need more liquid.)
3. Once it's all mixed together, use your hands or a silicone mold to form a cookie shape
4. Bake it 350 for about 7-10 minutes, or until it gets the right crisp/chewiness you want. You'll want to eat it right away because that chocolate melt is just calling your name ;)
