With the holidays right around the corner, I knew I had to start cracking down on a dish I could take to all these holiday parties. And if you're like me, you procrastinate like it's your job! Now that my semester is over, I'm been Christmas shopping and and wrapping gifts nonstop. But I enjoy it! I have to admit, my heart breaks a little after the holiday season...it's just the most wonderful time of the year :) This is a quick and simple dish you can take and make to any party! I enjoy it as a meal, and it's totally low carb friendly so no need to have the guilt.
1 low carb wrap
2 T cream cheese (room temperature is easier to mix)
1 oz canned chicken or fresh chicken (pulled)
1 oz Finely shredded mexican cheese (I use Kraft- love it!)
----This makes about 8-10 servings (although I eat it all to myself) so just double or triple the recipe depending on how many you want (ex: tray of 30- triple recipe)
Directions:
1. In a bowl, mix together your cream cheese, chicken and cheese until it's combined into a spread
2. Lay your wrap flat and spread your mixture on half of the wrap
3. Starting with the mixture end of the wrap, roll as you would a regular enchilada. Make sure you roll it tight so the mixture stays in
4. Place in fridge for 30 minutes and cut into slivers
5. Stick then back in the fridge, covered, until ready to be served
