So while grocery shopping today, I swear 80% of what I saw was fall. But hey, I ain't complaining because I love fall and everything about it. ESPECIALLY ALL THE FALL FOODS. Pumpkin, candy corn (and yes I'm going to splurge and eat some closer in October because it's one of the best candies ever created. Don't expect a sugar free version because candy corn is basically all sugar) caramel apples, and popcorn balls. Anyways, I decided to make one of my favorite snacks on that list: popcorn balls! And would you believe I made a clean version with only 2 ingredients and just as delicious?
Look how darn beautiful! The recipe is so simple I could do it with my eyes closed.
What you need:
2 C popcorn (My favorite is LiveLovePop)
2 T Nuts 'N More Pumpkins Spice Peanut Butter (this is a must because it is legit crack and so fall-like)
Directions:
1. Melt your peanut butter in the microwave for about 45 seconds or until completely melted
2. Toss your popcorn in your peanut butter and mix well, coating all the popcorn
3. Scoop ball like shapes onto parchment paper and freeze for 3 hours
I ate the whole batch with no guilt!
