When I was younger, I LOVED Buckeye Candy. My mom would always let me help her in the kitchen, mainly because I just wanted the extra batter. And even though I'm 19, I still did that while making these. Now before I decided on sharing this recipe, I had the real professional taste tester try them. MY DAD! And he loves them - YAY!
What you need:
1/4 C peanut butter
1/2 C ricotta cheese or cream cheese
2 T softened, unsalted butter
1/4 t vanilla extract
10 T erythritol (powdered in a food processor of coffee grinder)
1 C sugar free chocolate chips, melted
Directions:
1. Soften the butter in the microwave
2. Process together the ricotta (or cream cheese), vanilla extract, and erythritol until you have a smooth batter. Be patient - it might take a few minutes
3. Add in your peanut butter, softened butter, and mix until smooth - if it's not sweet enough, you can adjust
4. Let the mixture set and chill for about 10 minutes
5. Roll into balls and place on a lined cookie sheet with wax paper. Place this into the freezer for about 20-30 minutes
6. Microwave your chocolate in a bowl big enough that you can dip the balls into
7. Stick toothpicks in the centers and dip in the melted chocolate. Make sure you leave a small area at the top for the peanut butter to peak through
8. Place back into freezer to harden the chocolate, and then move into a container in the fridge
9. Enjoy!
