So these are similiar to my eggplant parm bite recipe, but these are a lighter version. Vegetables are like my best friend when they have cheese on them: because everything is better with cheese! ;)
These are so simple to do, I could probably do it with my eyes closed. Okay, I probably wouldn't try it, because I make messes even with my eyes open. But you get the point!
What you need:
1 medium zucchini
1/2 cup grated parmesan cheese
1/2 cup egg substitute (lower in calories than eggs, which I love)
2 Tablespoon of Italian seasoning (or seasoning of choice)
Directions:
1. Preheat oven to 350F
2. After you've washed your zucchini, cut it into thin slices. The thinner the better because they get more crunchy
3. Using two seperate bowls, put your egg wash in one, and your cheese and seasoning in another. You can also put your "breading" on a plate if you think it'll be easier
4. One at a time, dip the eggplant in your egg wash and then immediately into your breading. Flip your zucchini so you coat both sides
5. Place your zucchini on a sprayed baking sheet and sprinkle with a bit more parmesan if desired
6. Bake for about 35 minutes, and then half way through flip slices and bake for the remaining time
